Regardless of whether you are taking steps towards veganism for environmental reasons, your health, or animal welfare; vegan living doesn’t mean you have to miss out on all your favourite indulgences. Whether it’s vegan food, vegan fashion, vegan skincare or more, there’s never been so many cruelty-free alternatives available. We’re big believers that we all deserve the odd treat, especially in the gloomier winter months!
This is why for Veganuary this year, we’ve teamed up with our lovely East London neighbours, Lele’s Bakery. We’re bringing you one of our favourite I-can’t-believe-it’s-vegan recipes, Lele’s mouth-wateringly delicious vegan blondie recipe. It’s seriously moreish, with a perfect fudgy consistency. You can thank us later!
You Will Need:
1 teaspoon vanilla extract
1 1/2 cups chocolate chips
1 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 flax egg
6 tablespoon vegan butter
1/4 cup white sugar
6 tablespoon brown sugar
Preheat the oven to 180C and line an 9 x 9-inch baking tray with parchment paper.
Prepare your flax egg by combining 1 tablespoon of flaxseed with 3 tablespoons of water. Let sit for 10 minutes!
In a large mixing bowl, add your flour, baking soda, and salt and mix well. Set aside. In a separate bowl, add your sugars with butter, stir together until combined.
Add the butter/sugar to the dry mixture. Then add your vanilla extract and flax egg and mix together, until just combined. Add the chocolate chips.
Pour the batter into the tray and top with extra chocolate chips. Bake for 15-20 minutes, until the edges are just starting to brown.
Remove from the oven and allow to cool completely, before slicing. Enjoy!
